Rabbit Pie

Amount Ingredient
2 Rabbits
1/4 cup Olive oil.
3 Potatoes.
3 Carrots.
1 Onion.
1 ts. Salt
1/2 ts. Pepper.

Preheat oven to 350'F. Skin and cut up rabbit. Wash and place in roasting pan with the olive oil. Cover and bake for approximately 1 hour until meat is tender. Add cut up vegetables, sprinkle with salt and pepper, cover and continue baking until veggies are done, approx 45 min.

In the meantime, for the crust, mix bannock dough according to your own recipe. I use Flour, baking powder, sugar, lard, milk and eggs, and enough water, to make a soft dough. Roll out dough on counter top to the size of the roasting pan. Carefully place dough on top of rabbit and vegetables and bake until golden brown. ENJOY!
