Cranberry Muffins

This is a great fall time treat for when the cranberries are fresh.

Amount Ingredient
2 Eggs
1/2 cup Vegetable oil
1 cup Brown sugar
1-1/4 cups Flour
1 ts. Baking soda
dash Salt
1 cup Old Crow Cranberries
3/4 cup Chocolate chips (optional)

Preheat oven to 350. Mix eggs in a bowl. Add the oil and brown sugar and mix together. Add the flour, baking soda, and salt, and mix until smooth. Add the cranberries and chocolate chips last. Pour into greased muffin pans and bake for 12-15 minutes. You can also use loaf pans. If using a loaf pan the cooking time is between 45-60 minutes.

Enjoy with a hot cup of tea, butter is optional on the muffins or loaf.
